Manifesto on Greek cuisine

The tasting committee of Athenaromas submits the parameters that are taken into account to characterize a cuisine as modern Greek.

Our national cuisine is a key factor in our cultural identity. For this reason it is important that it is distinct from other national cuisines in its entirety, whether as traditional, urban or contemporary. A great demand is the creation of a clear identity of our national cuisine.

  • Greek cuisine is the collective taste consciousness that we have as a people, in terms of its flavors, aromas and idioms.
  • Modern Greek cuisine, i.e. artful Greek cooking, must incorporate in its creations the collective taste memory of the Greeks, create a consciousness of Greek identity, not cut the umbilical cord between present and past, modern trend and tradition. A modern creative dish must be "read" in Greek, create associations, taste memories, identification, familiarity, emotion.
  • A necessary condition for the creation of modern Greek cuisine is the knowledge of traditional and urban Greek cuisine, so as to ensure the continuity of our national gastronomy and to lead it into the future without the risk of losing its identity.
  • A modern culinary creation does not have the right to be "considered" Greek, either because it is based on Greek products or because its presentation on the menu resembles the image of a Greek cuisine dish. Greekness can only be established through its taste and its aromas, i.e. only through the admission that it communicates with the common feeling about Greek cuisine.
  • Modern Greek cuisine must be open to new ideas, to experimentation, to new techniques, to new aesthetic forms, to any mixing of foreign products with Greek, on the condition that the final taste result exudes Greece and does not betray the Greekness to for the sake of sensationalism and extravagance.
